#102 – Beth Armstrong’s Maple Treats
This is Recipe Roundup, episode 101. The frost is receding and that means that the maple water is flowing! It’s Maple time in the mountains and one of our lovely Board Members, Beth Armstrong, sent me several maple recipes to share this year. We’ll start off with the treat recipes!
Maple Cinnamon Pecans
(I double this recipe)
2 Cups halved pecans
2 Tbs. butter melted
4 Tbs. Pure Maple Syrup
2 Tbs. packed brown sugar
2 tsp. ground cinnamon
Dash of salt
- Preheat oven to 350F. Line a large baking pan with parchment paper or aluminum foil. Set aside.
- In large bowl, combine butter, syrup, brown sugar, cinnamon and salt. Add pecans to the mixture and lightly toss to coat. Spread pecans in a single layer on the prepared baking pan.
- Bake for 10-15 minutes or until pecans are lightly brown. Remove from oven and cool.
Maple Nut Bread
2 Cups sifted flour
¾ cup sugar
1 Tbs. baking powder
½ tsp. salt
1 cup milk
2 eggs
¼ Cup vegetable oil
½ Cup Pure Maple Syrup
1 tsp. vanilla
1 cup chopped nuts (walnuts, pecans)
Sift dry ingredients together. Combine milk, eggs, oil, syrup and vanilla in a medium bowl. Stir in dry ingredients and nuts then pour batter into a greased 5X9 loaf pan or two smaller pans. Bake in preheated oven at 350F for 45-50 minutes or until toothpick inserted in center comes out clean. Cool before trying to slice.
