#11 – Sunflower Seed Waffles (Listener Contribution)

This weeks recipe was shared with me by local listener Alice Dove.

 

Sunflower Seed Waffles!

Now if you don’t have a waffle iron, you can still make these into pancakes, though be warned, they take a little longer than typical buttermilk pancakes – but they also do not contain any egg, so cook time is dependent on your texture preference. 

Makes about 3 large waffles.

 

Ingredients:

1 teaspoon Sesame seeds

2 ½ cups water

2 ¼ cups rolled oats

¼ cup sunflower seeds

1 teaspoon salt

5 dates, chopped

2 teaspoon vanilla

Directions:

  1. Whiz dry sesame seeds in blender.
  2. Measure All ingredients into blender and whiz together just enough to mix, but not to get too thick. You may need to add additional water later if mixture becomes too thick. (If you prefer smooth batter, the recipe still works, but you will have a denser waffle and cook times may be affected)
  3. Grease waffle iron, pour and bake in a moderately hot iron for several minutes (will vary based on machine, this batter takes longer than a typical mix).
  4. Serve with your favorite toppings, such as jams, fresh fruit, maple syrup, and whipped cream!
