#21 – Summer Drink : Lime Rickey

Ingredients

Lime Juice – I highly recommend some tool for juicing, like a citrus reamer or squeezer. To get more out of your limes, microwave them for 5 seconds and then roll them against the counter before juicing. If you happen to have an electric juicer, just make sure to remove all of the rind before processing. Fresh juicing is such a pain…but I must say that there is a real flavor difference in a recipe like this. You are still more than welcome to use a bottled lime juice, or some combo of fresh and bottled – just note that bottled juice tends to have a slight bitter aftertaste.

Simple Syrup – You can buy it, but why not make it? We make ours by dissolving brown sugar into water over heat at a 1 to 1 ratio – this is a rich simple syrup. You could also use some maple syrup!

Seltzer – Plain works, but this is such a great opportunity to experiment with different flavors of seltzer. Make sure you are getting unsweetened so it’s not overly sweet.

Everyone is going to have a different preference when it comes to how sweet or tart a good Lime Rickey is, so feel free to play around with the amounts when you are mixing. Serve over ice.

My suggested ratio: 2 parts lime juice, 1-2 part syrup, 3-4 parts seltzer
