#3 – Chocolate Berry Sauce

Ingredients:

2 heaping tablespoon virgin coconut oil or butter

2 heaping tablespoons cocoa or cacao powder

1/3 cup of berries (blueberries, strawberries, raspberries, cherries, etc.)

Sweetener of choice (optional)

 

  1. In a small pan, heat oil or butter on low until completely melted.
  2. Add in berries and raise to medium heat.
  3. Saute the berries until they are soft, stirring continuously and making sure the oil doesn’t smoke. Test one of the berries by pressing into it with a fork  – if it’s cooked, it will mash easily. BUT, be careful –  that berry juice can be boiling hot, so take it off the heat entirely for at least 1 minute before mashing the remaining berries.
  4. (Optional) Strain out berry skin and seeds to discard if you so desire.
  5. Return berry/oil mixture to medium heat and ensure that it is completely emulsified (oil and water mostly not separate.
  6. Completely mix in cocoa/cacao powder slowly and remove from heat.
  7. (Optional) Add sweetener of choice to taste.

Enjoy on top of some ice cream, as an icing to cake, as a spread for toast or pancake…or whatever else you can think of! If you’d like your sauce to flow more, add a little bit of oil.
