#33 – Delicious Frittata
Frittatas are among the easiest and tastiest large breakfasts to make! All the eggy glory of quiche and omelets, with none of the finesse required to make it.
Ingredients:
1 lbs sausage
6 – 10 eggs (will affect cook times slightly)
Fresh Goat Cheese
Salt
Pepper
Italian Seasoning or other herbs
Directions:
- Turn on your oven’s broiler.
- Heat a large cast iron pan on your stove top and brown ground sausage until entirely cooked. Depending on the sausage and your preference, you may want to drain some but not all of the fat.
- In a bowl, beat the eggs with a pinch of salt until the mixture is relatively uniform. Pour into pan and turn off the burner. The pan should be hot enough that it will keep cooking the eggs. Spread the eggs gently so that the mixture sits evenly in the pan.
- Cut large rounds or dollops or crumbles of the goat cheese on top.
- Sprinkle with pepper and other herbs, then pop under the broiler for about 5 minutes. Keep an eye on it!
- Frittata is done with the eggs are completely cooked and there is a slight golden tinge to the goat cheese. Let cool for a minute or so, then serve and enjoy!
