#26 Mango Black Bean Salsa

Chips and salsa is a great snack anytime, but the mango in this recipe is perfect for a summer party. Though you can use any type of mango, I highly recommend trying the Altaulfo Mangoes, which are very soft and sweet.

 

Ingredients

3-4 sweet mangoes, chopped

1 can black beans, drained and rinsed

1 large tomato, finely chopped

½ red onion, finely chopped

2 tablespoons lime or lemon juice

Salt, pepper, red pepper flakes, and/or chili powder to taste

Cilantro

 

Directions

  1. Peel Mangos by slicing along both of the flat sides of the pit. Cut the mango flesh cross ways, being careful not to cut into the skin. Pop out mango chunks and toss with 1 tablespoon of lime juice and any red pepper flakes and/or chili powder you want to add.
  2. Combine all Ingredients in a medium sized bowl. Season with salt, pepper, and cilantro.
  3. Enjoy with corn chips and guacamole or on top of grilled fish!
